Coping with Dementia

My 87-year-old mother, Celia suffers from Vascular Dementia. Up to 20% of dementia cases have a vascular cause. According to research, 13.9 percent of Americans age 71 and older have some type of dementia. Vascular Dementia accounts for 2.4 percent.

With that said, Celia hasn’t been eating much as of late as a result of her taste buds continuously changing so I decided to ‘be creative’ in the kitchen & make her a calorie ridden egg/Mac N Cheese bagel! Of course, I added our delicious Hungarian sweet & peppers 🌶 & marinade which mom enjoys for extra flavor.

As I continue this chapter of my life caring for Celia, I can’t help but reflect on the countless memories of a plethora of delicious breakfasts she prepared & allowed me to devour: pancakes, eggs in various forms, cold/hot homemade pasta, meatballs, sausage, meatball sandwiches, pork, Chinese food, pizza 🍕 from Fairport Pizza & Spaghetti House (i.e., my godfather’s restaurant via Clementes) lol 😂😂😂😂😂 The Nesser Boys enjoyed delicious, homemade food on a daily basis!
